Ingredients for Ginger Cinnamon Cookies with Chocolate Dip and Cardamom Sprinkles

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup fresh ginger, grated
  • 1 teaspoon dried ginger
  • 3 teaspoons ground cinnamon
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt

  • 1 cup dark chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil (optional, for smoothness)

  • 2 teaspoon ground cardamom

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the Cookie Dough: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg, fresh ginger, dried ginger, and ground cinnamon, mixing until well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  4. Shape the Cookies: Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with your hand.
  5. Bake: Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  6. Prepare the Chocolate Dip: While the cookies cool, melt the dark chocolate and coconut oil together in a heatproof bowl over a pot of simmering water, stirring until smooth.
  7. Dip the Cookies: Once the cookies are cooled, dip half of each cookie into the melted chocolate, allowing excess chocolate to drip off.
  8. Sprinkle with Cardamom: Immediately sprinkle the top of the cookie with ground cardamom before the chocolate sets.
  9. Let Set: Place the dipped cookies on parchment paper to allow the chocolate to harden.
  10. Enjoy: Once the chocolate has set, your soft ginger cookies are ready to enjoy! Store any leftovers in an airtight container.

  • For an extra kick, you can adjust the amounts of fresh or dried ginger according to your taste. Same with the cinnamon.
  • Buy cardamom seeds (not pods) and fresh grind the cardamom yourself in a mortar and pestle or coffee grinder. #worththeeffort
  • Sprinkle a pinch of flaked sea salt on each cookie for an additional depth of flavour.
  • Feel free to simply spread the chocolate on top of each cookie instead of dipping.
