Max shares our family favourite Veg Taco Recipe with an Ayurvedic Twist AT THE CORE

There is something delightfully satisfying in the perfect taco-fiesta of crunchy shell, spicy beans and flavourful veg.

But traditional Mexican ingredients of corn, beans and abundant spice can cause gas or other digestive upset for some.

Introducing our Famous Uber-Flavourful Veg Taco

Inspired by the roasted butternut squash taco from our favourite vegetarian recipe blog cookie + kate, we level up with some of our best Ayurvedic tips to boost flavour while supporting ease of digestion.

Simple Ingredient List

  • Taco shells
  • Small flour tortillas
  • Sweet potato (or butternut squash or pumpkin)
  • Ripe avocados
  • Fresh onion
  • Lime
  • Ghee
  • Cabbage
  • Black beans (or pinto, kidney beans or even lentils will work)
  • Fresh Cilantro
  • Cumin
  • Coriander
  • Ajwain (indian celery seed)
  • Hing (aka asafoetida)
  • Smoked paprika

You can check your local health food store or Indo-Asian grocer for the spices. Or feel free to use your favourite combination of mexican spices, but add some easy to find cumin, coriander and fresh cilantro to balance heat and dryness.
